Dough Fermentation Processing System for a Large Food Factory

The client is an internationally renowned food brand and one of Hong Kong’s most advanced, largest, and best-equipped food enterprises, with production standards reaching international levels. They required the construction of a temperature- and humidity-controlled fermentation room with process control at their Dongguan production base to achieve fully automated dough fermentation.

Vijay designed a dough fermentation processing system comprising five modules: automated ingredient mixing, temperature- and humidity-controlled fermentation chamber, oil spraying workshop, AGV automated transport, and elevator system.

The process flow is as follows: First, four ingredients—flour, liquid yeast, soybean oil, and water—are delivered to the dough mixer according to the recipe and thoroughly blended to form a smooth dough.

Next, AGV carts transport the mixing troughs to the oil spraying workshop, where a uniform layer of vegetable oil film is sprayed onto the trough surfaces. This oil film prevents dough adhesion to the mixing equipment walls and prepares the troughs to receive the formed dough.

Next, AGVs automatically transport the formed dough to a temperature- and humidity-controlled fermentation chamber. This chamber features an advanced temperature and humidity control system, adjustable to specific requirements with temperature precision of ±1°C and humidity accuracy of ±2%. The dough ferments slowly under constant temperature and humidity conditions, maximizing dough quality and texture.

Finally, the AGV carts transport the fermented dough to an elevator, which conveys it to the dough mixer. The mixer automatically adds flour, sugar, water, and oil, then repeatedly kneads and mixes the dough. The finished dough is then transferred via a chute to the downstream portioning machine.
